Hi All, I usually don’t talk a lot about my personal life but I wanted to share a little bit about my recent experience that is soul cleansing and restores faith in saving exotic animals. One of my passions is animal rescue and conservation. At Oak Meadow Ranch in Valley View Texas, I wrapped up a three day “living on the ranch” experience.

You can swim with others, hug with a two toed sloth, play with lemurs in bed at a bed in breakfast wake up, swim with water buffalo, cuddle with a Fennec cat from the Sahara, hold baby kangaroos, and the list goes on with exotic cats to a boa constrictor.

They have a fantastic restaurant when you get to meet fury friends before dinner and then a 6 hour event after dinner going into habitat enclosures and interesting with the animals.

This is a place many do not know about and I hope you look up @oakmeadowranch_texas and make the EASY trip. Fly to Dallas and you are only an hour North to paradise. I am@been through a lot in my life and this is definitely one of if not the top life moving experience. The family running this conservation ranch is amazing. Every employee loves being here and you can tell. If you love animals and want an experience you have never had, this should go on your bucket list. We saw many animals like this on our travels in Costa Rica and Africa but never in person in your arms.

They they have built the most incredible exotic animal sanctuary and honestly puts many zoos to shame. Not a single animal is pacing like a zoo. Zero stress detected. I thank the love of my life @ukulele_jay_bbqs_wife for keeping this a secret and giving me the best anniversary and partial retirement gift ever! Mustard-Crusted Rack of Lamb | Team MINT JELLY OR NO? 🔥
If you’ve never had rack of lamb cooked this way… this is your sign. Juicy, tender, and packed with flavor — with that perfect crispy mustard-panko crust 🤌
Here’s how to nail it every time:
🥩 Start with 1 rack of lamb
➡️ Coat with your favorite rub
➡️ Add 1/4 cup balsamic vinegar + 1/4 cup Chardonnay wine vinegar
➡️ Marinate in a zip lock bag for 4–8 hours
🔥 Remove, pat dry, then go HEAVY with spicy brown mustard
🔥 Pack Japanese panko breadcrumbs all over (front + back)
♨️ Grill at 330°F (offset heat)
👉 Bone side DOWN, bones facing away from flame
👉 Cook until internal temp hits 110°F
🔥 Flip over direct flame (meat side DOWN, bones UP)
👉 Pull at 120-122°F
⏳ Rest 15 minutes — it’ll rise to 130–135°F
💯 Perfect medium-rare lamb: tender, juicy, and full of flavor
